Gable Fills the Roosevelt's Dinner Hours, and the Hotel's Own Calendar Fills Sunday and Monday

  • October 22, 2026

The ground floor of the Hollywood Roosevelt now has firelight. In the room that held Shirley Brasserie, low pendant lights hang over wooden tabletops and collected artwork, and an open live-fire hearth sits at the center, according to Los Angeles Magazine's account of the opening. The restaurant is called Gable, and it opened on Tuesday, August 18.

For anyone who lives up Outpost Drive, two months of service give a clearer picture of the restaurant's week. Gable serves dinner Tuesday through Saturday. On Sundays and the first Monday of each month, the hotel's own programming takes over. Put together, 7000 Hollywood Boulevard now has something going on almost every night, and it got there seven months before the building turns 100.

A New Room in the Old Shirley Space

Los Angeles Magazine called Gable the landmark hotel's "most significant update in years." The restaurant has 82 seats and took over the ground-floor space where Shirley Brasserie launched chef Craig Hopson's career. The Los Angeles Times reported that Hopson moved on in the latter half of 2025 to start Electric Bleu.

The name honors Clark Gable, the "King of Hollywood" and a regular at the hotel, who starred in It Happened One Night and Gone with the Wind. Chef Chris Flint, who previously cooked at Maude and Eleven Madison Park, runs the kitchen. Chad Austin, formerly of Bar Benjamin and Palm Springs's Bootlegger Tiki, runs the bar, per Eater LA's October 6 review. WhatNow Los Angeles also reported the August 18 opening.

Eater said the restaurant "intends to honor Los Angeles's past and present in equal measure," pointing to modern touches like a pizza inspired by a Koreatown restaurant.

What to Order

Here are the dishes Eater singled out, roughly in the order you would eat them:

  1. Tempura-fried maitake mushrooms with yuzu aioli. They work as a bar snack or a starter. If nobody at the table is ordering pizza, the pizza breadsticks with "pizza butter," made from tomato purée, Parmesan, chili flakes and oregano, do the same job.
  2. The 6th and Wilshire pizza. Bulgogi and aged kimchi on a crisp, flatbread-style crust, with the cheese torched at the table. Eater traced it to the Koreatown landmark Sun Nong Dan.
  3. Family-style branzino served bossam-style, with lettuce, perilla leaves, salsa macha and salsa verde. It is a lighter main for two, and Eater suggested adding the duck ragù pappardelle so the table leaves full.
  4. The pork chop with anticucho glaze and grilled peaches. A month after opening, it was already a popular order.

Los Angeles Magazine also mentioned a hanger steak with broccoli-cheddar pomme dauphine and sauce choron, and martinis made with koji-washed vodka.

Austin splits the cocktail list into four sections: "spirited," "whimsical," "bright," and "spiritless." Some drinks use tahini, gochujang or charred corn. Eater's visit began with a light Japanese whisky welcome cocktail and also included the rhum-based Cosmic Joke and a smooth dirty vodka martini. The nonalcoholic Bangarang, made with fermented cantaloupe and lime, is on the same list and got equal praise.

The Roosevelt's Week, Night by Night

Gable's hours fit around the hotel's standing programs, which fill most of the nights the restaurant is closed. Here is how a week looks, based on Gable's site and the Roosevelt's events calendar:

Night What's on Where Time
Sunday Magic at the Library Bar with HUBB, every week Library Bar 6 p.m.
Monday Chess and Jazz, first Monday of the month Spare Room Check the hotel calendar for time
Tuesday Gable dinner Lobby level 5 to 9:30 p.m.
Wednesday Gable dinner; Classic Cinema Night every other week Lobby level; Cinegrill Theater 5 to 9:30 p.m.; films at 7 p.m.
Thursday Gable dinner Lobby level 5 to 9:30 p.m.
Friday Gable dinner Lobby level 5 to 10 p.m.
Saturday Gable dinner; Down the Rabbit Hole every other week, 18+ Lobby level; Cinegrill Theater 5 to 10 p.m.; show at 8 p.m.

The Sunday and Monday rows matter most here. Gable is closed both nights. HUBB, a close-up magician known from The Magic Castle and The Chicago Magic Lounge, performs at the Library Bar every Sunday. On the first Monday of each month, Chess and Jazz takes over the Spare Room. The next one falls on November 2.

Two nights pair dinner with a show. On alternating Wednesdays, film critic Jose Ignacio Cuenca hosts a classic film retrospective in the Cinegrill Theater. The hotel describes the series as the Cinegrill paying "homage to its roots." On alternating Saturdays, Down the Rabbit Hole, a cabaret by Tableau Productions directed by Tracy Phillips, plays behind a bookcase. It reworks Alice in Wonderland with burlesque and surrealist visuals. A 5 p.m. table at Gable leaves enough time before either show.

Eater's tip covers the rest of the evening. After dinner, go upstairs to the Spare Room for another drink and maybe a game of bowling.

Booking, Hours and Groups

The hotel says reservations at Gable are "recommended," and Gable's site books through OpenTable. The two sources list different weekend closing times. Gable's own site says 10 p.m. on Fridays and Saturdays, and the OpenTable listing says 10:30 p.m. For a late Saturday table, go by the restaurant's site.

Gable serves dinner only. Its menus page lists dinner, dessert, cocktails and wine, with no lunch or brunch. The dining room has a cordoned-off area for larger groups, so it can also host a business dinner or a private event. Eater also recommends it before a show at the Pantages or a concert at the Hollywood Bowl.

Daytime is a separate matter. The Tropicana Pool is open daily to hotel guests and day-pass holders, with poolside dining and seasonal programming.

Seven Months From the Hotel's 100th

The Roosevelt opened on May 15, 1927, according to the hotel's press page. It hosted the first Academy Awards in 1929. The hotel's homepage introduces Gable as an opening timed to the run-up to its 100th anniversary. So far it has not posted any centennial events or a schedule.

Ahead of the anniversary, the hotel's biggest update in years is a restaurant named for one of its best-known regulars. The Cinegrill's film series is described as a nod to that room's roots, while Sunday magic and first-Monday jazz continue through the fall. Eater described the centennial as falling next year, and the May 15 opening date puts it in mid-May 2027.
